Chef Thomas Perrone at Brooklyn Roots at 8620 – 3rd Avenue announced that he will have timpanos tomorrow. April 22nd. I never heard of timpanos. Chef Perrone wrote that timpanos was a stuffed fresh pasta shell stuffed with rigatoni vodka, crispy chicken, provolone, roasted garlic and fresh ricotta. And he shared this photo:
